Flavorful and filling, yet light enough for a hot summer evening!
1 Large head of romaine lettuce,
rinsed & chopped
2 Cups cooked white meat chicken,
cut into bite sized pieces
1/4 Cup sliced almonds
1/4 Cup sliced sun dried tomatoes
2 Green onions, finely sliced
1/2 Cup good quality olive oil
1/4 Cup light balsamic vinegar
1/2 Teaspoon ground garlic
1/2 Teaspoon onion powder
1/4 Teaspoon black pepper
1/8 Teaspoon red pepper
1 Tablespoon parsley flakes
1. Whisk the olive oil, balsamic vinegar, garlic, onion powder, black pepper, red pepper together with the parsley flakes to make the dressing. You can add 1/4 teaspoon of salt if desired, but it's not necessary.
2. Toss all ingredients together well in a large bowl and serve immediately!
